An arb is an over and an under at different books whose implied probabilities add up to under 100%, so betting both locks in a profit. A middle has the over line below the under line, so both can win. Always confirm both lines are still live before betting.
EV = (no-vig fair probability × payout) − 1. Fair probability is a weighted average of every other book's devigged two-way price (Pinnacle and tight exchange quotes count most; stale, wide and off-market quotes are dropped). Needs 3+ books, or 2 sharp ones. ● = sharp books behind the price; est. = no two-way price, so a vig cushion is assumed.
